Pear Vinaigrette (Dairy-free, Gluten-free, Vegan, Paleo)

In an attempt to eat with the seasons, pears have been on rotation in our household. I whipped up this Pear Vinaigrette recipe on a whim. While on vacation in New Mexico I cooked a birthday dinner for my aunt and threw this dressing together. Everyone enjoyed it, so I decided to make it again! I used incredibly simple ingredients to make this using items I have on hand in the pantry almost all the time. Any basic viniagrette is made with good quality vinegar and olive oil. Maple syurp bring outs out the sweetness from the pears and a hint of lime juice gives this dressing a little bit of tang.

The trick to making a vinaigrette is to first mix the ingredients together and then stream in the olive oil while the food processor is still running. The ingredients will emulsify together making the consistency light and smooth.

This dressing is:

Tart

Light

Sweet

Creamy

Tangy

Pear Vinaigrette

Ingredients:

1 pear (ripe but firm)

1 lime, juiced

1 tsp maple syrup

1 Tbsp. white vinegar

1/4th tsp salt

A few pinches black pepper

1/4 cup extra virgin olive oil

Instructions:

1. Place all ingredients in a blender or food processor (EXCEPT olive oil). Begin to puree the mixture until smooth.

2. Slowly stream in the olive oil while blending. Scrape down the sides of the blender or food processor if needed.

3. Leave running until the mixture is completely smooth and creamy (this may take a few minutes).

4. Store in an airtight container. Drizzle over your favorite salad.
